Ginger-Mint Honey Mocktail
Prep time: 2 hours (including chilling time)
Serves 6

INGREDIENTS
6 cups water
4 T ginger, peeled and grated
6 bags mint tea
6 sprigs of mint, save stems
1/3 cup honey
2 limes, sliced into rounds

PROCESS
In a medium pot, bring water to a boil. Once boiled, remove from heat and add ginger, honey, tea bags and mint stems. Let steep for 10 minutes.

Strain the liquid into a serving pitcher. Leave out to cool until room temperature, then move to the refrigerator.

In tall glasses, layer a few lime slices with mint leaves and ice cubes. Pour the chilled tea over the ice.
