Grilled Flatbread with Yogurt, Cucumbers and Radishes
Serves 2

INGREDIENTS
2 pieces of store bought flatbread or naan
3 tablespoon olive oil, divided
½ cup whole fat plain yogurt
1 cucumber, thinly sliced
2-3 radishes, thinly sliced
2 asparagus (only if fresh and crisp otherwise omit), thinly sliced on the bias
½ cup snap peas, thinly sliced on the bias
½ lemon, juiced
Kosher salt + freshly ground pepper
Handful of torn herbs (dill, basil, mint, parsley, chives)

DIRECTIONS

Brush flatbread with 1 tablespoon of olive oil. In a grill pan over medium-high or under the broiler, grill bread until browned on both sides. Remove from heat and let begin to cool slightly.

In a medium bowl toss together thinly sliced cucumber, radishes, asparagus and snap peas with remaining 2 tablespoons of olive oil and lemon juice. Taste, and season with kosher salt and freshly ground pepper. Gently fold in the freshly torn herbs.

Spread the yogurt over the grilled flatbread and top with cucumber radish salad.

Slice and serve.
