Strawberry Basil + Cream Popsicles

As you can see from my last post, I'm on a bit of a popsicle kick lately. And the truth is, I have one more coming your way here soon that has a bit of alcohol mixed in it. But for now, these popsicles are just about everything I love of summer. Bright fresh sweet berries, mixed in with basil, some coconut milk and a squeeze of lemon juice. They are the perfect summer treat. And although you have to wait half the day before you can eat them, preparing them takes simply 5 minutes. 

The idea for mixing strawberries and basil came to me last summer from this smoothie combination. Since then, I have been pretty obsessed with the flavor mix, adding basil into my smoothies with strawberries, blueberries, and even blackberries. It adds that instant hit of summer. And just in case basil is not your thing, try adding mint. Enjoy!

STRAWBERRY BASIL + CREAM POPSICLES
makes 12

2 cups strawberries
1/2 cup basil
1/2 lemon, juiced (about 1-2 tablespoons)
1/4 cup sugar (plus 1-2 tablespoons more if needed)
1 15 oz. can full fat coconut milk
 

Pulse strawberries, basil, lemon juice and sugar in a blender until chopped. I prefer to not fully puree the strawberries, as I like a few chunks of berry. 

Beat coconut milk until creamy. You can add in 1-2 tablespoons of sugar here if you prefer the coconut milk taste a bit sweeter. 

Start filling the popsicle mold with adding 2 tablespoons of strawberry basil mixture. Top with coconut milk, leaving room to add one more tablespoon of strawberry mix to the top. 

Freeze for 4-5 hours. And then eat!
