Spring Pea Tartine

Herbed Summer Pea + Radish Tartine

Serves 2

2 thick slices of bread

Olive oil

1 cup fresh sugar peas or snap peas, trimmed

3 radishes, greens removed, thinly sliced

½ cup mix hand torn herbs (dill, mint, chives)

½ lemon, juiced

Salt + pepper

Brush both slices of bread with olive oil and grill under the broiler, or in a grill pan. Set aside.

In a medium bowl, toss together the peas, radishes, herbs, and lemon juice. Add a good drizzle of olive oil and season with salt and pepper. Top grilled bread with vegetable mix and serve.

  • Other options - Use this simply as a guide. Add in other vegetables like thinly sliced cucumbers, turnips and fava beans.

  • On the base, olive oil is perfect, but adding a good spread of whipped ricotta or goat cheese is lovely too.
