Happy Friday! On Monday I started a #Salad30 challenge on Instagram, and I would love for you to join me! Everyday I post (and eat!) a salad recipe with some quick easy ideas and inspiration. Follow along this month for 30 days of salad, and fun! 

This is my go-to clean out the fridge style, throw whatever you have in the bowl, mix it up and eat it sort of kale salad. And honestly, it is one of my favorites. Need to bulk it up, add some shredded chicken, or grains like brown rice or faro. Add more fruit, or avocado! Some roasted veg would be good too. Use this dressing as a basic starter for your kale salads, just make sure to use your hands and really massage it into the kale, and then allow it to sit while you prep the rest of your ingredients. For kale salads, I always use lacinato kale. Where as for smoothies, kale chips, or sautΓ©ing, the curly kale works just fine.

Clean Out the Fridge Kale Salad

Ingredients

1 bunch of lacinato kale, ribs removed, and cut into ribbons
1 garlic, grated
1/4 cup Pecorino plus more for garnish
3-5 tablespoons Extra-virgin olive oil
Juice of 1 lemon
Pinch of dried chili flakes
Salt + pepper
3 pickled radishes, sliced (unpicked works too)
1 date, chopped
1/4 cup toasted chopped pistachios
1/4 cup castelvetrano olives, smashed and torn

Process
Prep kale and place into a bowl. Combine garlic, cheese, olive oil, lemon, chili flakes, salt and pepper. Pour over kale and massage together. Add radishes, dates, pistachios, and olives. Toss. Garnish with additional nuts and cheese

** The amount of olive oil depends on your taste, so start with a little, mix together and you can always add more.
