Pork Noodle Kimchi Soup

So excited to share with you this 20 minute soup that I feel like is the most flavorful and satisfying recipe to come out of my kitchen in the last few weeks. Made with ground pork, garlic, ginger, gochujang, bone broth, kimchi, bok choy, all served over rice noodles. Lots of tweaks can be made to this recipe, using ground chicken or turkey in place of the sausage. Not a bok choy fan, kale would work, or turnip greens. Leave out the gochujang for less spice. Serve this over a variety of noodles or rice, or honestly works great just on its own. Maybe add a 6 minute egg for extra rich creaminess.

Pork Noodle Kimchi Soup

For this recipe, I used Bonafide Provisions Frontier Blend Bone Broth that is deep in flavor, and hearty rich. This broth is a blend of grass-fed beef bones, lamb bones, and bison bones, along with turkey bones, onion, carrot, celery, and a mix of herbs. A good broth is key to a deep flavorful soup.

Pork Noodle Kimchi Soup

Pork Noodle Kimchee Soup
4 servings

INGREDIENTS:
1 tablespoon oil (coconut, avocado, or olive oil)
1 pound ground sausage (turkey or chicken would also be delicious)
4 garlic cloves, sliced
1- 1” piece ginger, peeled, and finely sliced
4 cups Frontier Blend Bone Broth (Chicken Bone Broth would work as well
3 tablespoons gochujang (red chili paste will work too) *optional
3 tablespoons Tamarai (soy sauce or coconut aminos sauce will work)
1 cup kimchi
2 bok choy clusters, separated, larger pieces chopped  
8oz. Rice noodles 
Green scallions, sliced for garnish

STEPS:
In a medium pot over medium heat, warm the oil and add the ground sausage. Cook, breaking up the sausage into small bits until cooked through, but not browned. Add the garlic and ginger and cook for another minute. Stir in the broth, then add the gochujang (if using), tamari and bok choy. Turn heat to a gentle simmer and cook for about 10 minutes until the bok choy is tender. 

In the mean time, cook your rice noodles according to the package. Once cooked, rinse under cold water and serve into 4 bowls. 

Add the kimchi to the soup and let sit for another minute to warm the kimchi. Taste and adjust seasonings, adding salt, tamari, gochujang or more kimchi juice. Remove the pot from the heat and serve the Pork Kimchi Soup over the rice noodles. Garnish with green scallions and serve.
