Friday Favorites

Skillet Chicken with Potatoes and Lemons (3 of 1).jpg

Years ago when I started this blog I used to have a series called Friday Favorites, and I’m very excited to be bringing it back. Just a simple round up of some of my favorite things, along with a little behind the scenes of our everyday life. Hope you enjoy, happy weekend, xoxo.

Starting with this Crispy Chicken with Saucy Potatoes and Lemon! No real recipe here. Just follow along. Pat your chicken dry, season with your favorite seasonings (I used this sesame-turmeric spice blend, and highly recomend). Preheat oven to 425. Thinly slice some lemons (remove the seeds), thinly slice some garlic and potatoes and set aside. In a cast iron pan over medium heat, add a bit of oil and then add the thighs skin side down for about 7-9 minutes until very golden brown. Flip and cook for another 5 minutes. Remove from the pan and add the lemons. Allow them to caramelize for a few minutes, then remove. Add the garlic and potatoes and cook for a few minutes until they are coated in the chicken fat and seasonings. Add the lemon slices back in, and the chicken on top. Place in the oven for about 15-20 minutes until the chicken is cooked through. Done and done, and so delicious.

This is Charlie, she loves climbing trees, eating chicken, her banana and taking naps. The rest of the photo is a very real glimpse of a dirty house. Maybe one day my kids will put their belongings away?

Now that photoshoots are picking back up I have been getting quite a bit of takeout while on the road. These beauties are from Master Kong in Portland. But it is my goal to get better about making my own. As well, here are a few current favorite cookbooks: Xi’an Famous Foods, In Bibi’s Kitchen, Eating Out Loud.

I have been obsessively researching pizza ovens for over a year. I am here to tell you that the Gozney Roccbox is absolutely a game changer. We are 100% obsessed.

Working out, baths, candles, and music have been a huge part of my self-care routine. This year I started working with a health coach and am participating in a women’s workout group, they keep me motivated and inspired.

Recently we stayed at a very cute cabin on the Wilson River outside of Tillamook, Oregon. The kids attended their school zooms, I answered emails, Jake fished, and then we would walk the beach getting our fill of popcorn shrimp and clam strips. I took notes of everything cute in this rental from Parachute, Dusen Dusen, and wore my favorite beanie from Madewell and this jacket.
