When your in-laws own 15 blueberry bushes and your house is surrounded by blackberries, your fridge and freezer become overly stocked of these delicious fruits. We have been eating them for breakfast, lunch, dinner, desserts of course, and in our drinks! Side note, I love frozen blueberries for a snack. And although I love the traditional ways to devour these berries, my favorite way is to add olive oil, sea salt and balsamic vinegar. Like how we did with this Roasted Strawberry Gin + Tonic! Roasting in olive oil and sea salt and drizzling with balsamic once roasted, increases the sweetness of the berries and creates a deep rich flavor that you didn't know existed in fruit. We have been doing this with plums too, works perfectly! Olive oil (has to be good quality, my favorite is from here) and sea salt are my two must haves in the kitchen. And when Jake took me camping for a week, they were right along in my bag, with hot sauce, of course. They do extraordinary things to your food. Like taking a lovely tomato and making it an incredible tomato with two added ingredients. This roasted blueberry balsamic recipe is coming soon, with a pretty incredible olive oil cake too!
